NACHOS WITH CHUNKY GUACAMOLE

Who doesn’t like nachos! Here’s one for dinner tonight guys! The whole family loves nachos and if you’re lucky, there may even be a little left over for tomorrow:)
2 tablespoon olive oil
600g minced beef
1 onion, diced
2 cloves garlic, chopped finely
1 handful fresh parsley, chopped finely
1 red chilli, chopped finely
2 packets of taco seasoning
400g chopped tomatoes in a can
1 large tomato, diced 1 red capsicum, diced
1 can red kidney beans, drained
1 lemon - juice
Heat 1 tablespoon olive oil in pan. Add minced beef, brown lightly. Add 1 taco seasoning, mix well. Drain meat handset aside.
Heat 1 extra tablespoon of olive oil in pan. Fry the onion and garlic until just soft. Add extra seasoning, chilli, tomatoes (canned and fresh), red kidney beans, capsicum and parsley and salt (optional).
Add the drained mince and combine well. Also it to cook for a further 5mins and then turn off the heat. Add cucumbers and mix well.
Cut avocado in half, remove stone. Remove from shell and cut roughly.
Add the mince in serving plates, top with avocado, sprinkle a tablespoon of lemon over the avocado. Top with sour cream and add a handful off CCs on the side. Ready to serve immediately.
