OCTOPUS ROLLS (dragon Dawgs)


COOKBOOK: This Could Get Messy

My husband had been to the fish shop and came back with this big boy! He was craving octopus, not sure why!

I’ve cooked lots of baby octopus in the past but not many with this big creature. I found this great recipe which didn’t let me down. I turned big octopus tentacles into bite size and they were delicious.

Octopus is an excellent source of omega 3 fatty acids which lowers your blood pressure and slows the buildup of plague in the arteries. It is also rich in vitamins and minerals. It’s low in fat, making it a great source of protein if you’re trying to manage your weight.

RECIPE

Serves 6


1k+ large octopus tentacles

Olive oil for deep frying

12 rashes of bacon, rind removed

Icy water

Toothpicks


SALAD

1 tablespoon olive oil

1 red onion , diced

3 tomatoes, diced

1/2 cabbage, remove centre core and slice thinly Salt & pepper

1 tablespoon sweet chilli sauce

2 tablespoon mayonnaise

Parsley, handful chopped finely


Cut each tentacle off the octopus, remove the head. Add water in a deep pot, bring to temp 75C or 165F. Drop the octopus pieces in the water and allow it to boi for 55-60mins not allowing the water to get any hotter.

Prepare a bowl full of ice and cold water. Remove cooked octopus and place it in the icy water for 5mins. Remove from icy water and pat dry, set aside.


In a pan, add olive oil and fry red onion for half a minute, add cabbage & salt and pepper. Fry until cabbage is soft in texture. Remove from heat. Place cabbage mixture in a deep bowl, add sweet chilli sauce, mayonnaise. Combine well. Add tomatoes. Combine well and set aside.

Cut each tentacle into bite size. Cut each bacon rash in half or allow the bacon to roll over 1 1/2 times around the bite size tentacle. Secure with a toothpick and set aside. Add olive oil for deep frying in a deep pan. Add oil to only cover a 1/4 of the pot. The bacon will make the oil rise. Bring it to boil 180C. Add bacon and octopus rolls and fry for 2-3mins until the bacon turns just golden in colour. Remove and set aside on a kitchen napkin. On a serving plate, add the cabbage and tomato mixture. Place the rolls over the salad, sprinkle with parsley and its now ready to serve.
