PESTO TURKEY KEBABS

Turkey is a lean white meat which is low on fat and is an excellent source of high protein. This meat is high in proteins, niacin which is an essential human nutrient and a form of vitamin B3 and vitamin B6, and it also contains anti-cancer properties.

This is a delicious recipe and one that everyone will enjoy. Purchase the thicker skewers to make it easier to thread the turkey rolls

RECIPE

Serves 4


4 x turkey steaks, approx in total 500-600g

4 tablespoons pesto (in a jar)

4 large slices of leg ham

150g sun dried tomatoes, strips

150g mozzarella cheese , thinly sliced

Salt & pepper

A handful chopped parsley

200g 3min noodles (optional) 4 skewers

Olive oil to brush over the skewers

Lay turkey steaks between two pieces of greaseproof paper. Pound to flatten evenly.

Spread 1 tablespoon of pesto onto each fillet, top with ham, sun-dried tomatoes, mozzarella cheese, a little salt and pepper and parsley. Roll up on the long side of the fillet and cut into 1 inch pieces. Pierce each steak pieces with one thick skewer. Brush the sewers with olive oil and place them on a flat oven tray (lined) Preheat the grill. Place the tray in the grill at a moderate temp 170C. Grill on each side for approx 7-8mins carefully turning the skewers around. Ensure that the rolls are cooked through (they could need an extra min, this is dependant on the heat of your grill) Serve skewers on a bed of noodles Note: You can use metal skewers if you wish but remember they will be super hot to touch and you will need thermo kitchen oven mittens to turn them over.
