PROSCIUTTO WRAPPED BABY BOCCONCINI ON CROUTONS

So you have friends coming over almost unannounced and you want to prepare something very quickly that will impress. I found these little delights delicious! Serve them with a pink champagne and you have yourself a party starter!



RECIPE

Serves 8 (two each)


2 tablespoons of balsamic vinegar

1 tablespoon of olive oil

1 large tablespoon of thyme, chopped

salt and pepper

16 baby bocconcini

8 long slices of prosciutto (each cut in half & diagonally)

1 french stick ( cut 16 thin slices)

50g of grated cheese

Place bocconcini in a bowl. Add balsamic vinegar, olive oil and salt & pepper. Mix until all bocconcini pieces are well coated.


Place a bocconcini on one piece of prosciutto and begin wrapping, bringing the shortest side in first, tucking it in under the bocconcini and then rolling it over. Grill in hot oven for 2mins or until cheese is just starting to melt. Set aside.

In the meantime, butter the crouton pieces. Place them on a tray and grill them for approx 2min (or until you can see a slight chance in colour (you don't want to toast them. Don't leave them in for too long)


Sprinkle the warm croutons with grated cheese. Place a bocconcini on each crouton and place under the grill for 1-2mins. Remove from the oven/grill and they are now ready to be served.
