RASPBERRY GEM SCONES

This would have to be the easiest and the most delicious scones I’ve ever made! Suer easy to make! If you don't have a mixer use a hand held mixer which will do the job nicely. 


A basic cake batter can be transformed into deliciousness with some raspberries added to the top. 

I'm going to be naughty and actually make these again!

RECIPE

Serves 24


60g butter

1/2 cup sugar

2 eggs

1 cup milk

1 tablespoon vanilla essence

2 cups self raising flour

96 raspberries

Icing sugar for dusting

Preheat oven to 200C

Butter a tray for muffins.


Cream the butter and sugar in a mixer or with a hand held mixer. Alternate with add milk and flour. Mix until batter is soft and well combined. Add vanilla essence and combine well.


Fill moulds in tray 3/4 full. Place 4 raspberries on the top of each , pressing down lightly.


Bake in 180C oven for approx 15mins or until golden.


Remove from tray and allow them to cool down. Once completely cooled off, dust with icing sugar.
