SMOKED SALMON AVOCADO BRUSCHETTA

This is going to be a popular summer easy-dinner recipe!
How I love prawns / shrimp. They compliment any dish, nice and refreshing , tasty and light. Just perfect!
Nothing to this recipe and everyone will love it!
The only ‘cooking' is to grill the bread slices and the rest is put together in no time

6 slices of a crusty Italian bread
24 cooked prawns/shrimp, peeled and tail removed
1/2 cup of your favourite mayonnaise
1 teaspoon of lemon rind
1 tablespoon of baby capers
1 teaspoon of grained mustard (optional)
1 large tablespoon of fresh dill, chopped
2 avocados, sliced
300g smoked salmon
In a bowl, combine prawns / shrimp, baby capers, lemon rind, mayonnaise, dill and mustard. Mix well.
Place bread slices on greaseproof paper over an oven tray. Cook under grill until golden brown. .
Top each piece with smoked salmon slices. Top again with prawns/shrimp and avocado.
Ready to serve
