SPANISH MINCE DISH

COOKBOOK: Â Recetas para cocinar sin aqua (spanish cookbook)
The beauty in cooking with a Spanish cookbook is that it can take me some time to convert into English, but I did it!Â
It was simply a mince dish. A delicious mince dish!
How was it served? With a green salad and it was almost like a Mexican meal without the chilli! Just perfect for me!

RECIPE
Serves 4
2 tablespoons of olive oil
500g mince beef
1 onion, sliced thinly
1 large red capsicum, sliced thinly
2 cloves of garlic, chopped
1 handful parsley, chopped finely
1 handful of olives , pitted (I used with stuffed capsicums/ peppers)
2 large tomatoes, seeded and diced
Salt & Pepper
Heat oil in pan, add garlic and onion, cook until onion is just soft. Add capsicum and parsley. Cook until capsicum is just soft. Add mince to the pan. Fry and blend in with the mixture. When almost browned, add tomatoes and olives.
Ready to serve with a green salad.
