TOMATO RAINBOW PIZZA

Who said making pizza is difficult! It’s fun

It’s easy

It’s a healthy option

I will keep saying it, when you make a homemade pizza, you’l rarely buy takeaway. Delicious! Get the kids involved and it will be lots of fun.

RECIPE Makes 2 medium pizzas


2/3 cup lukewarm water

1 1/2 teaspoon of dry yeast

2 teaspoons honey

1 1/2 cups plain flour

Salt & pepper

350g mixed cherry tomatoes (medley)

2 teaspoons olive oil

80g parmesan grated cheese

120g of tasty grated cheese (or mozzarella)

In a small bowl whisk the lukewarm water with the yeast, add the honey, stir , cover it and let it stand for 5-7mins until foamy on the top.

In a food processor, add flour and a pinch of salt, blend. With the machine running add the yeast mixture. Dough texture will be sticky and wet.


Transfer the dough to a floured surface and knead for 5mins until it becomes smooth and elastic. Cut dough into 2 equal pieces.

Grease the trays with oil, place each piece of dough in the centre of each tray. Cover loosely with glad wrap or a plastic wrap. Set aside in a warm place for 45mins or until its doubled in size.

Slice the tomatoes in half lengthways.


Pre-heat the oven to 180C

Stretch the dough over the tray with your knuckles or fingertips. Drizzle some olive oil and work it through the dough base. (this can be done directly on the tray or on greaseproof paper)

Top with parmesan cheese, grated cheese, tomato pieces, salt and pepper and add a little more grated cheese over the top.

Bake the pizza for approx 15-20mins , or until golden and cooked through.


NOTE: the shape does not need to be a perfect circle!
