VEGETABLE & CHICKEN FRITTERS

Substitute the chicken for ham!
Super easy to make! What a great way to get the kids to eat their vegetables! Grated carrots, zucchini, some ham or chicken, parsley and egg and you will have them all returning for more!

1 large carrot, grated
1 large zucchini , grated
1/4 cup corn kernels
2 tablespoons parsley, chopped finely
Salt & Pepper
3/4 cup grated cheese
70g shredded chicken or ham , chopped roughly
3 large eggs, lightly beaten
1/2 cup plain four
Combine carrots, zucchini, corn, parsley, cheese, chicken or ham, salt and pepper. Add eggs and flour. Mix well.
Heat 2 tablespoons of olive oil in pan. Take a large tablespoon of mixture and drop it in the pan. Repeat with the rest of the mixture. Cook approx for two minutes, turn over carefully. Flatten light with a spatula and allow it to cook a further 1 -2 mins.
These fritters can be eaten warm or cold. Great for lunches.
