This is a classic french soup with a thickened texture and which tastes out of this world!Â
There are number of different versions and I loved this recipe.Â
Easy to make and delicious!

RECIPE
Serves 4
2 leeks , sliced
1 onion, halved and sliced thinly
2 tablespoons of butter
3 potatoes, peeled & sliced thinly
2 cups chopped BBQ chicken
1 bunch of chives, sliced
3 cups chicken broth
salt & pepper
1 1/2 cups of fresh cream
Melt butter in deep pot and fry onions until soften and slightly coloured. Add leek and allow it to cook for an extra minute. Add potato, chicken, half of the chives, and chicken stock and bring to boil. Simmer for 15-20mins or until potatoes are cooked through. Season with salt and pepper.
Turn heat off.
With a soup blender or a hand held blender, blend until soup is smooth in texture. Add cream and blend well.
Serve with chives scattered on top.
