OMG I have discovered that lasagnas do not have to contain meat to be absolutely delicious! This was so so good!

This recipe was selected from a very old book called ‘The New Glucose Resolution’ which was published in 1996. I believe it was one of the first books that came out with low GI recipes. At the time we thought it was a gimmick, we now understand that low GI foods plays a huge part for glucose monitoring for diabetes Type 1. Excellent book, great recipes!

RECIPE

SERVES 6

VEGETABLE SAUCE

2 bunches of english spinach, washed and stalks removed

olive oil

2 medium onions, chopped

2 gloves garlic, chopped

250g mushrooms, sliced thinly

1 small green capsicum, chopped

140g tomato paste

1 x 440g can mixed beans, rinsed and drained

1 x 440g can chopped tomatoes, undrained

1 teaspoons of mixed herbs

salt and pepper

CHEESE SAUCE

20g margarine

1 tablespoon of plain flour

1 1/2 cup low fat milk

1/2 cup grated low fat cheese

pinch of nutmeg

salt and pepper

LASAGNE

200g instant lasagne sheets

4 tablespoons parmesan cheese

Blanch (as per the video) or lightly steam the spinach until wilted, drain well.

Vegetable sauce - heat the oil in a non stick frying pan. Add the onions, garlic, fry until soft. Add the rest of the ingredients and cook for 20mins.

In the meantime, you can start the cheese sauce. Melt the margarine in saucepan. Stir in the flour and stir until all is moist. add milk gradually, stirring until smooth. If you’re cheese sauce is too thick, add a little more milk to give it the correct consistency. This should only take approx 2-5mins. take off heat and stir in cheese , keep stirring until it is melted.

To assemble, pour a thin layer of vegetable mix on the base of a greased casserole dish , (16cm x 30cm).

Place over it a layer of lasagne sheets. do not overlay. (hint : you can break them up with your hands if you need to cut in a certain shape). Add another layer of vegetable mix. add a layer of cheese sauce and then another layer of lasagne sheets. Repeat, vegetables, cheese sauce and parmesan cheese to golden the top of the lasagne. Bake in moderate oven, 180C for approx 40mins or until golden on top. Allow it to set for 20mins. Serve.
