Kumara is another name for sweet potato. It is considered a superfood for diabetics as it has been shown to stabilise blood sugar levels. It’s high in fibre which also helps reduce levels of cholesterol in the body.

All this aside, it taste damn good as well! Add leek and some herbs and you have a delicious dinner ready for all!

RECIPE

SERVES 4

1k kumara (sweet potato)

2 tablepoons olive oil

2 teaspoons sea salt

3 cloves of garlic, crushed

300g fettuccine (trio coloured)

extra olive oil

2 leeks, sliced

2 tablespoons of rosemary

Balsamic vinegar

Parmesan cheese

Salt & pepper

Peel and chop the kumara in small cubes. Place in a bowl and add olive oil, salt & pepper. Mix well and transfer onto a tray for baking. Bake in a pre heated oven, 180C for 30mins, turning them at half time. Remove from oven and set aside.

Heat extra oil in pan and fry crushed garlic. Add leek and stir fry for 1 min or two until leek is soft. Add rosemary.

Boil water, add a tablespoon of oil and a tablespoon of salt. Cook fettuccine as per the instructions on the packet. Drain.

Add the pasta in a deep bowl, add balsamic vinegar and mix well. Add the kumara mixture , mix well. Its ready to be served topped with parmesan cheese.
