A nice simple roast with a delicious easy to make mint sauce. This recipe came from a beginners cookbook and it is well suited for someone new to the kitchen. I had my doubts about the sauce but I was wrong, it was yummy with the lamb!

RECIPE

SERVES 4

1.5kg of leg of lamb

Salt and pepper

1/2 cup water

6 large potatoes, peeled and cut in quarters

500g piece of pumpkin, peeled and cut into pieces

1 large sweet potato, peeled and cut into pieces

1/4 cup olive oil

40g butter, melted

MINT SAUCE

1/2 cup water

1/4 cu sugar

2 tablespoons vinegar

1/4 cup chopped fresh mint

Preheat the oven on moderate 180C.

Rub salt & pepper on the leg of lamb ( I used black and white pepper). Place the leg in a roast pan or straight onto a deep baking dish. Add water to the base & bake for 1 hour and 15mins for medium rare . Add a further 15mins for extra cooking if you wish.

In a another baking dish, add some olive oil to the base. Add the potatoes and pumpkin pieces. Brush the melted butter on the pieces, add salt and pepper and bake for approx. 50mins on medium heat. Turn potatoes & pumpkins over once during cooking.

MINT SAUCE

Combine sugar and water in small pan. Stir over low hear until sugar dissolves. Remove from heat. Add vinegar and mint. Cool slightly and serve in a jug.
