MINI QUICHES WITH SPINACH & FETA

A perfect savoury snack for the family. So easy to prepare and the kids will love it. This is one excellent way to provide the nutrients in one little bundle without them knowing it!

Pumpkin seeds, also known as pepitas, are rich in antioxidants, iron, zinc, magnesium and many other nutrients. This along with the nutrients of spinach and feta make it a healthy choice for a snack.

RECIPE

Makes 12

8 eggs, lightly beaten

250g frozen spinach, thawed and liquid removed

1 tablespoon olive oil

1 x onion thinly sliced

100g feta, crumbed

Salt & pepper

150g grated cheddar cheese

A handful of pepitas (pumpkin seeds - crushed)


Pre heat the oven 180C. Line an 8 hole muffin tin, line with paper cases.

In a frying pan, heat the oil and fry the onion until golden and soft. Add cooked onion in a deep bowl. Add the spinach (well drained - this can be done with your hands), 3/4 of the pepitas , feta cheese , salt & pepper and eggs.

Divide mixture evenly amongst the paper cases in the tray. Sprinkle the rest of the grated cheese and pepitas evenly over the muffins. Bake for 20-25mins, or until cooked through

Allow them to cool. The quiches will keep for 2 days in an airtight container.
