Basic and easy to make. I cannot brag about this one, it was nice.
The recipe was original for John Dory fillets but I had no luck in finding them so I settled for ling fillets.
Over all the dish was nice, nothing fancy, just nice.
Definitely easy to make but I felt it just missed something in the flavour department.

RECIPE
Serves 4
2 tablespoons of butter
1/2 cup of basil leaves, chopped
2 cups of silver beet, chopped
170g each portion , ling fillet or john dory fillet
Salt and pepper
1 lemon, juice + extra
Melt the butter in a deep pan. Add the basil and stir for a few seconds. Add the spinach and turn until leaves are wilted. Season with salt and pepper, add lemon juice.
Arrange the fillets in the pan, cook for 3-4mins on each side, arrange the greens over the fillets when fillets and cooking. Add extra lemon juice to the fillets, cook again on other side. When ready to serve, remove the greens and fish and display on a dish, ready to serve.
