ORANGE SQUARES


COOKBOOK: Kitchen Workbooks - 150 Delicious Squares


These squares had a very distinguished taste which I feel is more suited to adults, and even more so to those who love oranges. Easy and fun to make. Oranges are not my favourite fruit, so I could easily give this one a pass nevertheless it was a great recipe.

RECIPE

Makes 40 squares


2 medium orange

250ml Raisins (or currants)

1/2 cup butter , softened

1 cup sugar

1 large egg

2 cups of plain flour

1/2 teaspoon baking powder

GLAZE

1 cup of reserved orange juice + extra (if required)

1 1/2 cup icing sugar

Preheat the oven to 175C

Cut oranges in half and squeeze the juice of each half. Set juice aside.

Process only one of the halves of the oranges along with the raisins in a food processor until finely chopped.

Beat butter and sugar with an electric beater or processor. Add egg gradually until mixed well.

Add plain flour and baking powder. Combine well. Transfer mixture into bowl, add the orange/raisins mixture and combine well.


Grease a tray 22cm x 233cm . Live with greaseproof paper. Spread the batter evenly over the tray. Bake in a 175C oven (350F) for approx 20-25mins. Remove and cool.

GLAZE

Add sifted icing sugar in a bowl, add the orange juice in small batches until it is well combined and smooth texture. Not too runny, it should be a thicker consistency which does not run of the cake,. Spread evenly and refrigerate for 30mins.


Remove from tray, cut off the sides and slice into squares or slices. Enjoy

NOTE: when slicing with a sharp long knife, wipe or dip in hot water in order to make it a smooth slice of the cake. Wipe off any excess at each slice.
