ROASTED POTATO SALAD

Potato is a good source of fibre which can help you lose weight by keeping you fuller for a longer period of time. Potato is a starchy vegetable and studies show that the carbs in a spud digests rapidly but has a high glycemic index which can cause blood sugars to surge and then dip. Those who are insulin dependent should be made aware of this. This is a super easy recipe which provides some variety to the basic potato salad.

RECIPE

Serves 4

16 slices of prosciutto

1k baby chat potatoes, rinsed & halved

1 tablespoon of olive oil

Salt and pepper

4 tablespoons white vinegar

1 cup water

100g baby rocket

A handful of chopped parsley

CREAMY MUSTARD DRESSING

1/4 cup whole egg mayonnaise

1/2 cup of sour cream

3 tablespoon baby capers

2 tablespoons of wholegrain mustard

1 tablespoon lemon juice

Preheat the oven at 180C

Combine potatoes with salt, pepper, olive oil, vinegar and water in a casserole dish. Bake in oven for 40-50mins until golden brown and cooked through. Remove potatoes from dish and set aside.

Line an oven tray with greaseproof paper, place the prosciutto and place under a grill for a min or two. In that time it will crips. Remove and chop into large pieces.

Place rocket on serving plate. Sprinkle with mustard dressing. Top with roasted potatoes. Top with prosciutto pieces. Add more of the dressing and sprinkle with parsley. Ready to serve.

CREAMY MUSTARD DRESSING

In a bowl add the mayonnaise, sour cream and baby capers, add wholegrain mustard , lemon juice and mix well.
