Im not sure if this is a ‘fast’ recipe to make but certainly delicious to eat! It may be ‘fast’ to cook but time consuming to prep vegetables and fry eggs but very much worth the time.

Healthy eating!



Serves 4

1 tablespoon peanut oil, plus one extra

2 rashes of bacon, chopped

4 green onions, chopped

425g baby corn spears, drained and halved

1/2 red capsicums, seeded and chopped

100g snow peas, trimmed

2 teaspoons of shrimp paste

450g jasmine rice, cooked as per package instructions

1/4 cup soy sauce

1 teaspoon samba oelek (optional)

4 eggs

1/2 cup iceberg lettuce, shredded

In a wok or large frying pan, heat oil on high. stir fry bacon for 1-2 mins or until cooked. Add green onions, corn, capsicums and snow peas. Stir fry for 1-2 mins.Add shrimp paste and stir fry for 1 min. Add samba oelek, soy sauce, stir fry for 1-2mins or until all cooked through. Turn heat off and add cooked rice. Fold in mixture and set aside.

In another large frying pan, heat extra oil and fry the eggs for approx 2 mins or until set.

Serve rice mix on a bed of shredded lettuce topped with a fried egg. Ready to serve.
