COOKBOOK: Coles Summer Magazine 2017


When mangoes are not in season I turn to mangoes in a jar and they did the trick nicely for this recipe!

Noodles, rocket, mango, fried red onion , cooked BBQ chicken and some italian dressing, and you have an amazing salad which can be classified as a main dish.

It was absolutely delicious!


Serves 4

1 tablespoon olive oil

100g rice noodles (thai style)

1 BBQ chicken, chicken removed & shredded

1 red onion, thinly sliced

100g rocket

1 can mangoes or 2 fresh mangoes, peeled and sliced

Salt & pepper

1/2 cup italian dressing

Place noodles in large bowl and cook or cover with hot water as per instructions on package. Drain noodles and set a side. Rinse them under cold water so they don’t stick.

Meanwhile heat olive oil and fry red onion until soft.

Place noodles in a large serving bowl. Add fried onions, chicken shredded, rocket and mangoes. Add salt and pepper and dressing. Toss to combine and its now ready to serve.
