CHICKEN SCHNITZEL CAESAR SALAD

Sometime a salad just doesn’t fill you up, right? Look again! This one will most certainly satisfy. With the introduction of a schnitzel combined with salad all on the one plate, you just can’t go wrong. You could serve schnitzel & salad individually, but that’s not as satisfactory as having it combined with egg, bacon and salad all on the one plate.

Let’s talk about eggs! They not only contain a large amount of protein, but they are also a good source of vitamin D (which helps the immune system) and choline (which helps metabolism and liver function as well as feta brain development)

Can you eat eggs every day? They say eating an egg a day can keep your HDL (High Density Lipoprotein) levels high. Those with a lower HDL have a higher chance of developing heart disease issues. According to studies, eating two eggs a day for 6 weeks increases HDL levels by 10%, and this is a good thing. Hope you enjoy it as much as we did



RECIPE

Serves 4


SALAD:

550g cooked chicken schnitzels (recipe below)

4 rashes of bacon, diced

2 baby cos lettuce, leaves torn

4 hard boiled eggs, peeled & cut into 3 portions each

1/2 cup caesar dressing


Slice cooked schnitzel , thinly. In a heated frying pan, cook the bacon until golden . Remove from heat, drain any juices and set aside.


Peel the boiled eggs and cut into three portions each.

Prepare the lettuce and place it on a serving plate. Add the crispy bacon and the schnitzel pieces over the top of the lettuce. Add the eggs and then complete with the dressing over the top. Ready to serve.

CHICKEN SCHNITZEL:

2 cups breadcrumbs

1 cup grated parmesan cheese

2 tablespoons of lemon rind

4 tablespoons of parsley, chopped

2 tablespoons garlic powder

Salt & pepper

1/2 cup flour

2-3 eggs, whisked

2 tablespoon milk

550g chicken breast schnitzel, unclimbed

Oil for frying , I use olive oil

In a flat shallow dish, combine breadcrumbs, parmesan, lemon rind, parsley and garlic, salt & pepper, mix well. Whisk eggs and milk in a bowl. Place the flour in a different flat shallow dish.


Coat the chicken in the flour, then dip in the egg, then straight into the breadcrumb mixture. Repeat again with all the pieces.


Heat about a 1cm thick of oil in a frying pan on medium heat. Fry the chicken for approx 2-3 mins on each side or until golden brown and cooke through.


Remove and place on a kitchen napkin.
