CHICKEN NOODLE SOUP


COOKBOOK: The Beginner’s Cookbook


A very simple & easy soup to make. You can cheat with this one in many ways. I already had some bbq chicken, but of course you can make your own or use any other type of cooked chicken. 

You can also make your own broth but I was in a hurry, so out came the instant broth! You can also slice by hand but I was naughty, I had a family that was suffering from hunger pains, so I pulled out the processor to speed things up!

A great simple winter’s meal for all

RECIPE

Serves 4

3 litres of chicken stock

2 cups shredded cooked chicken

2 celery stalks, finely sliced

a handful parsley, chipped finely

150g dry vermicelli, chopped into short pieces

Salt & pepper

Add broth to pot. Place on medium heat, add celery, chicken salt & pepper and bring to boil. Simmer for 5 mins.

Add vermicelli and simmer for 5 further minutes or until noodles are cooked through.

Ready to serve. Serve with crusty bread.

Please note: I used BBQ chicken. If you’re short on time, buy a cooked chicken and remove the meat off the bone.
