The salad was yummy and filling. The chicken can be either roasted or BBQ. I’m not a huge fan of anchovies but when chopped up finely and added to the sauce, it tastes delicious. Easy to prepare, and you can cheat and buy a cooked chicken as I did and shredded it for this recipe.

Anchovies have many vitamins and minerals that provide major health benefits. They are best known as a source of omega-3 fatty acids, which promote brain and heart health. Anchovies also have selenium, which, if eaten regularly, may reduce the risk of some types of cancer.

Serves 4

1/2 cup mayonnaise

1 tablespoon lemon juice

1 teaspoon Worcestershire sauce

2 tablespoons BBQ sauce

4 anchovies, chopped finely

5 rashes of bacon, cut into strips

1 cos lettuce, chopped

1/2 BBQ chicken , remove meat & shred

4 eggs

1 cup parmesan cheese, shaved

8 slices of Turkish bread, toasted

Whisk the mayonnaise, lemon juice, Worcestershire sauce and barbecue sauce. Add the anchovies and mix.

Add the eggs in a pot, top with water, bring it to boil and simmer for 4mins. Remove from heat. Drain the water and top with cold water. Peel with running cold water and this will make it easier to remove the shell. Set the eggs aside for a min and then cut in half.

Heat a frying pan on medium heat and add the bacon strips. Fry until crispy and golden. Remove and set aside.

Place the lettuce on a serving plate (or serve individually on four plates)

Scatter the fried bacon over the lettuce. Spread half of the mayonnaise over the bacon. Spread the chicken over the top. Splash the rest of the mayonnaise over the chicken . Place the eggs over the top and sprinkle the shaved parmesan cheese.

Serve with toasted Turkish bread
