NASI GORENG INDONESIAN RICE

Nasi Goreng is fried rice in Indonesia and as a traditional dish it is eaten in every home. They add a meat but its more about the flavour of the rice. Easy to make and very flavoursome, there appears to be a number of different varieties of this dish, this one in particular is very simple.


You can make this dish as hot as you like. I dont tend to like it very hot and nor do some of my family members, but I always keep a little extra chilli for those who can handle it.

RECIPE

Serves 4


250g long grain white rice

1 large red capsicum, cut into thin strips

1 medium onion, sliced thinly

1 tablespoon peanut oil

350g chicken breast, cut into strips (or 2cm bite size)

Salt and pepper

50g peanuts, roasted (optional)

1 large red chilli, seeded and chopped

a handful of parsley, chopped finely (or coriander)

125g bean sprouts, roughly chopped

100g baby spinach

2 large tablespoons of soy sauce


Place the peanuts in a dish and roast under the grill or in the microwave for a minute or two. Chop the roughly.


Cook rice in a bowl of boiling water, add a dash of salt Cook as per instructions on package, approx 10-12mins. Drain in colander and set aside, stirring occassionally.


Heat peanut oil in a wok. Add onions and stir fry until just golden. Add capsicum, bean sprouts, chilli, parsley, set aside. If you’re working with a large wok, add the chicken to one side and stir fry it. When it is almost cooked , combine with vegetable mix. Please note: I kept the veggies in the same wok but away from the heat.

Mix all and add baby spinach. Add drained rice. Add salt and pepper to season. Add soy sauce. Ready to serve.


Peanuts , roasted (note: in the micro it will not look like they’ve posted until you remove the dish carefully and mix. You’ll find that they would have started to roast in the centre of the dish. Don't allow this to get too dark, otherwise you will end up with blackened peanuts)
