BACON, FETA & ROCKET SLICE

Paul absolutely loved this slice! Very unusual to introduce rocket in the mixture. Most bakes with greens normally have spinach and I must say, the rocket was just as nice. I was concerned it would burn up but surprisingly it retained its colour and didn’t turn too dark.

This is a light meal to be served with a green salad and should take no time to prepare and bake. Give it a go!

RECIPE

SERVES 4

Olive oil

100g bacon rashes or steaks, chopped

1 onion, finely chopped

4 medium eggs, lightly beaten

200g feta, crumbed

1 bunch of rocket leaves, shredded lightly

1 tablespoons of thyme, chopped

salt and pepper

Preheat oven 180C. Brush a 19cm square tin with olive oil or butter.

Heat oil in a frying pan over medium-high heat. Add bacon and onion and cook, stirring for approx 3 minutes or until bacon is brown and onion is soft. Remove from heat and set aside.

Add egg in a bowl, add bacon mixture, feta, rocket and thyme and stir until just combined. Season with salt and pepper.

Spoon mixture into pan. Bake in oven for 30mins or until set. Remove from oven and set aside. Serve with green lettuce.
